 Moisture content for head, bones, and fins: 79.5, 75.0 and 74.6 respectively; protein: 13.9, 15.2 and 14.0; fat: 0.3, 0.4 and 1.0; ash: 5.6, 9.0 and 8.7. Moisture content of guts, roe, and testes: 81.3, 83.0, and 83.5 respectively; protein: 13.9, 13.4 and 12.9; fat: 1.5, 0.65, and 1.38; ash: 1.6, 1.25 and 1.4. The gas composition in the swim bladder was found to be 19% oxygen, 0.5% carbon dioxide, and 80.5% nitrogen (Ref. 6038).
